Bahamas & Caribbean Vacations |
10-12 Sour Oranges or Limes squeezed
into bottle*
1/2 teaspoon salt
10-20 Bird Peppers halved (to taste - mild fewer - hot more)*
Preparation instructions:
Squeeze juice into bottle (locals like to use coke bottles) until nearly full.
Add salt and bird peppers. Refrigerated for a day or two before using.
Uses:
To season, fish, souse, boiled fish, boiled fish heads, oxtails, chicken, conch,
as a marinate or prior to eating as seasoning. Can be used instead of lime juice
in any recipe. Soak raw conch in it prior to eating for flavour.
* Traditionally Sour Oranges are used
but Limes work equally as well. Bird peppers are native to The Bahamas and are
locally used but any hot pepper can be substituted however the amount would
depend upon the desired *heat*.
