1 lb Tuna or Shark Steaks
2 tablespoons orange juice
2 thinly sliced green onions
2 tablespoons chili sauce
1 tablespoon gingerroot, finely chopped
1 tablespoon soy sauce
1 teaspoon crushed, dried basil
1 Bahamian bird pepper finely chopped
Cut fish into serving size pieces. In a shallow dish combine orange juice, onion, chili sauce, gingerroot, basil, soy sauce, and Bahamian bird pepper. Add fish to the mixture, coating all sides of the fish, and cover, let stand for 20 minutes at room temperature. Using non stick cooking spray, coat the unheated rack of a broiler pan. Drain fish from marinade, reserving marinade, and place fish on the coated rack. Broil fish for 5 minutes about 4 inches away from heat, then turn fish over, brush with marinade and broil another 5-7 minutes. Fish is ready when it flakes with a fork.
